I created this recipe from scratch one day, and just adored it. Since, I have tweaked it to make it perfect to my standard so now it’s finally ready to share. I love this recipe because it’s so fresh for the summer months!
Ingredients:
• angel hair pasta (you could use any type of pasta here, but something about the angel hair really absorbs all the flavors nicely)
• 1 package hot Italian sausage
• 1 clove garlic
• 3 large lemons
• sundried tomatoes, chopped
• parsley
• parmesan cheese
• olive oil
• butter
• salt + pepper to taste
Directions:
- Cook the Italian sausage on the stove and grind to your preference.
- Start boiling water to cook pasta
- Once Italian sausage is fully cooked, transfer to a plate and save for later.
- In the same pan, melt 1 tablespoon butter or olive oil. Add in chopped clove of garlic and sundried tomatoes.
- Squeeze the juice of 3 lemons into the pan making sure the seeds are taken out.
- Start boiling your pasta and remove once it is el dente (3 minutes for angel hair).
- Once strained, add pasta to lemon juice & butter mixture.
- Add in a scoop of pasta water and let pasta absorb the flavors of the pan while you mix.
- Stir in sausage, 1 tablespoon parsley, and salt + pepper to taste.
- Plate and top with parmesan cheese.
